Ingredients

peel and chop

veg stock

peanut butter

sweet chili sauce

coconut milk

shredded basil
Instructions
in soup pot saute onions, garlic, carrots for 5 minutes
add salt, vegetable stock, and water
bring to a low boil and cook for 20 minutes
use immersion blender to make creamy
add peanut butter and chili sauce, blend to smooth
taste and adjust — add salt, honey, chili, whatever
fill bowls, drizzle with coconut milk, and sprinkle basil on top
