Ingredients
Brine
- 2 lbs chicken breasts skinless
- 2 cups water
- 3 tbs salt
- 3 tbs garlic
- 2 tsp coriander seeds
- 1 tsp cumin seeds
- 1 tsp peppercorns
- 2 tbs lemon juice
Spice Blend
- 1 tbs ground cumin
- 1 tbs curry powder
- 1 tbs chili powder
- 1/2 tbs ground allspice
- 1 tsp ground cinnamon
- 1 tsp ground pepper

Instructions
- Place all ingredients in the brine list in a zip-lock bag
- top off with more water, place in refrigerator for 2-3 hours
- preheat oven 400
- rinse the chicken, pat dry
- allow the chicken to sit at room temp for 20 minutes
- mix all ingredients from spice blend
- give chicken a heavy coat of the spice blend
- roast for 4 minutes, flip and roast for another 4. Check temperature and cook as needed.
- Serve with Moroccan Dipping Sauce
