- 1 large yellow onion
- 5 tbs garlic
- 2 lbs carrots peel and chop
- 4 cups veg stock
- 4 cups water
- 1 cup peanut butter
- 3 tsp sweet chili sauce
- 1/2 cup coconut milk
- 1 cup shredded basil

Instructions
- in soup pot saute onions, garlic, carrots for 5 minutes
- add salt, vegetable stock, and water
- bring to a low boil and cook for 20 minutes
- use immersion blender to make creamy
- add peanut butter and chili sauce, blend to smooth
- taste and adjust -- add salt, honey, chili, whatever
- fill bowls, drizzle with coconut milk, and sprinkle basil on top
